Using IfoEdit I always select 6channel Dolby and strip-out 2channel.
But is that always OK if some DVD players are set up
to use 2channel as their default?
Do all DVD Players demux 6channel down 2channel
if it set up to output regular "plain" stereo?
If that is the case, why do they include 2channel audio in the first place?

all dvd players can "mix down" dolby 5.1 to stereo. could the 2-channel track you're taling about be a commentary track, if it is not, i'm not sure why they would include a stereo english track as well as the 5.1 track. maybe a "proper" stereo track sounds better than 5.1 mixed down to 2-channel. i remember watching "deep blue sea" in stereo(mixed down from the 5.1) and the dialogue was very low compared to the film's score and sound effects. so i would bet that the stereo tracks are mixed better.
