I don't like how the "auto split" is working when I dub my old tapes so I need to do this manually. Some of my tapes took an extra minute or two and I may want to overlap my chapters a little. How would I set the flexible recording for that?

You can't.
What does "overlap my chapters" mean?Last edited by sanlyn; 22nd Mar 2014 at 21:11.

IMO the best way to copy a tape with the EZ-48v is to use a separate VCR. I know it doesn't make sense to buy a combo and not use the VCR but using a separate VCR hooked to the EZ-48v's line inputs allow you do many things manually, including FR. Doing a internal copy is a PIA IMO and best avoided.
Pre '07 Panasonic combos allowed full manual control, even using the built in VCR but that went out the window with the introduction of the EZ series
