What do you mean which to use? for what? If your source is NTSC use NTSC, if your source is PAL use PAL. etc.

well where do u live? if u like in the US or Canada use NTSC if u live in the UK or so use PAL

just open it in dvd2avi ( i'm assuming you have vobs ) and hit f5 .. then goto http://www.doom9.org/mpg/dvd2avi2.htm to see if you need to do forced film or not
