You can't using that Sony. There is only one HDMI connection which is used for output to the TV and there are no optical inputs.

You need an AVR with HDMI inputs to use the new HD sound formats. An AVR with optical inputs would allow you to use the old DD or DTS audio. Time for an upgrade.

I have now resolved the problem
I can listen to my PS3 through my home cinema kit no problem
All you do is hook a scart from the home cinema to my Bravio Sony HD TV (AV2)
Then hook a scart from the PS3 through to the TV (AV1)
Set the PS3 Sound option from HDMI TO AV
Set the TV option to output on AV1
Thats it!! surround sound from my home cinema
I have even tried a standard DVD with 5.1 and DTS through my PS3 via my home cinema and i can get 5.1 and DTS output from the speakers
    Thanks once again
If anybody needs to ask any more questions please feel free to ask.

Congrats. I hadn't thought of passing the audio through the TV.
