Okay, I'm basically a total newbie to video encoding. I understand how to do simple conversions, but I really need some big help here. I'd like to learn how to encode using VDM, AviSynth, and other programs like mkvextractgui. I'd also like to learn a lot about subtitling as well, I've got Aegisub and have played around a bit with it.
So, what I'm asking is, is there anyone here who is willing to "tutor" me over IM or something with a lot of these programs.

Probably not.
There are many guides available for the programs and processes you mentioned. All you have to do is spend a little time and read a little. If you get stuck, then a member may assist you. But 'tutoring' is highly unlikely. If you have specific questions about a program or a procedure, feel free to ask.
And Xandal, in the future please use a more descriptive subject title in your posts to allow others to search for similar topics. I will change yours this time. From our rules:Try to choose a subject that describes your topic.
