Nero 7 is the simplest way.
    MKV: Merely Krappy Video.

Subbers, a request from an avid viewer: Either don't use mkv, or supply avi or mp4 as an alternative.

For those frustrated with converting MKV: http://www.immortalmusic.net/mkv/

I have both Nero and ConvertXtToDVD.

Here's the deal (from my experience):

Nero Pros: Lots of flexibility and options. Relatively easy to use. You can do "anything".
Nero Cons: Crashes from time to time, average MPEG-2 encoder, mediocre speed.

ConvertXToDVD Pros: Easy, fast, reliable and a very good MPEG-2 encoder.
ConvertXToDVD Cons: Very few options (Ex:menus, bitrates for encoding, etc.)

Depends what you want. They are both somewhat opposite.

You want simple and hassle free and don't care about many options -> ConvertXToDVD.

Your project is picky and you want better features and are willing to put up with a headache or three once in a while -> Nero.
I hate VHS. I always did.
