How does one copy ps2 files to a dvd or cd?

This is not any dvd authoring. Moving you to our off topic computer section.

You don't copy PS2 files (if you want a playable backup). You copy the disks. Use DVDDecrypter - ISO read, ISO write. But you must have a mod chip, explot, swap trick or other method to play the backup.
Individual files (if that's really what you want) can be copied just like any other file.
