hmm, most of us would use Final Cut Studio ( instead of Vegas)
and/or Compressor2, Quicktime Pro or ffmpegx for encoding.

Windows, and all the software you mention, run well on the intel Macs, assuming you install BootCamp and boot into native Windows.
