Does a HDMI DVD player really make that much of a difference when playing regular DVDs? Or does it just soften up the picture like Photoshop would when you add more pixels.

HDMI supports 480p for a same size digital transfer.
For HD you are converting 720x480 to either 1280x720 or 1920x1080.
Progressive DVD would upscale with interpolation similar to Photoshop.
Interlace DVD would need to be deinterlaced before upscale interpolation.Recommends: Kiva.org - Loans that change lives.

Shouldn't make any difference. The player should pass the signal without making any alterations.

It gets far more complicated for the interlace DVD. You can feed it to the TV as 480i and let the HDTV deinterlace it, or you can set the player to a progressive mode and force the player to do the deinterlace.
