it looks like a very promising application but i don't know where to start, i don't have the time to learn every aspect of the program but i'd be curious how some of the other members of the forum use DVDEdit...

I only use it to change the 16:9 flag when necessary. You need to have the VIDEO_TS folder on your hard drive and to change all its permissions to Read & Write. You do this by clicking on the VIDEO_TS folder, pressing command+I to get the Get Info window, click the triangle next to Details and click the Apply to Enclosed Items button. Now the IFO contents can be edited and saved.
I suggest playing around with it. As long as you don't Save anything you aren't finalizing any changes. -
I've used it with moderate success. You do need a certain sense of how program code works if you want to do elaborate things with it. (I prefer my backups to play the movie right away, and go to the menus when it's finished.) For quick and dirty stuff, like losing logos, disclaimers, trailers, and such, I just hunt around for the titles, copy the post-commands, and paste them after the pre-commands. The result is usually that the cells don't play at all.

I've only used it once to set a specific subtitle stream and audio stream as default for a menu-less movie-only copy.
It's quite elementary, in the way that it will only allow you to set low level parameters, unlike 'user friendly' 'high end' apps that obfuscate the details with a more result-driven approach. But DVDEdit sure has loads of options for those who have in-depth knowledge in DVD inner workings. A good thing to have available in Macintosh video toolbox.
