Which AVI format are you looking to convert to? DIVX, XVID, 3VIX, DV? This make a difference in what program is recommended.

Speed and quality are usually mutually exclusive, but if you know what you're doing, and want XviD/DivX, you can't beat VirtualDubMod, as that exposes all nasty codec settings.
If you weigh in "ease of use" too, and perhaps want to encode for standalone DivX players, AutoGK or avi.net are pretty neat.

I would say Virtualdub for the amount of adjustments and options. Fairuse Wizard for ease and simplicity.

If you are using the Xvid codec, the settings you use for the codec are where you get the quality. The program that uses the codec is less important.

What I like about Fairuse is that when I run a DVD through Shrink, I can just use the output that's on my harddrive to feed into Fairuse and let it process the video into Xvid for my multimedia computer. So I have both a DVD backup and a Xvid backup.

DVDx is good also, for most DVDs.
I have been into computers since 1980. Ive been tinkering with DV in one flavor or another since 1990.

There's nothing wrong with avi.net - does a DVD in 'round real time on my system, and never any sync issues. Since you haven't bothered to fill in your system specs, 8 hours may or may not be what you should expect.
Used DVDx too, back in the VCD days, and that too worked fine. Obviously, YMMV.
