On Wednesday I did the software update for FCP 5.0.2 and quicktime 7.0.2 etc. Since then I no longer see the option of exporting to mpeg 2 or m2v in FCP. There are new options such as export to iPod and Mpeg 4. Has anyone else experienced this or am I losing my mind?

This has been an issue for a number of users. The "preferred" export path from FCP is via Compressor, so they removed the options for QT MPEG-2 from the Export menu. Funny thing is many of us still have it as an option if the export is "via QT Conversion>Movie to QT Movie>(options)MPEG-2".
If this isn't happening for you, export the timeline as a QT movie and try that in Compressor or QT7. That's the old school workflow and it should work.
