    The DVD2AVI seems to even rip the dolby digital 5.1 ( 6 channel ) audio of DVDs, to a wav file, but I haven't seen any audio software show 6 audio tracks of those wav files.

    Try Audacity. If the wav file is truly 6 tracks, it should show that way.

    Then I would guess that the wav file in question does not contain 6 channels.
    (For the record, I have never seen a 6 channel wav file, but I have no reason to doubt that Audacity would show it correctly.)

    edit in what way? (like simple cut/crop, or advanced full re/encoding and spatial setup of all channels?)
    and in what container? (i.e. AC3 in VOB can be simple-edited with most dvd authoring software)

    Do know any software that can show us graphically the 6 channel audio tracks of a ac3 ( Dolby Digital 5.1 ) file?

    I'm pretty sure that besweet can create 6 mono WAV files from 5.1 sources.
    If in doubt, Google it.
