    ive tried to convert a few mkv files to dvd or avi
    what programs to do suggest

    mkvextract for extracting streams.
    mplayer is good for decoding audio.
    As for converting, it depends somewhat on what is in the mkv. Could be VFR, could be native AVC or it could be something that you can just demux to an avi (mencoder is good for remuxing).
