I have been trying to watch 'House of flying daggers' with subtitles but they are really big, they look really block and they go too fast because there is only enough room on the screen for a few words at a time. I thought it may have been just that DVD but it's the same on LOTR aswell. I was wondering if it is possible to change the way subtitles are viewed.

No. DVD subtitles are images and not that easy to change, I haven't seen any software dvd player that can resize subs (yet). You can reauthor the dvd with new subs but that is a lot of work, see https://www.videohelp.com/guides.php?guideid=706&howtoselect=6;34#706

You can play with external text subtitles on your PC using for example Media Player Classic, File->Load subtitles and then you can change fonts and size...but you may get sync problems and you must rip the subtitles to text manually using subrip.
