Let's say there was a DVD that was previously backed up that is now unencrypted and did not need compressing (under 4.7 Gigs) that I liked to watch, but not necessarily LISTEN to...
Would the easiest way to replace the audio track be to copy the VIDEO_TS folder, demux the files with ffmpegx and replace the audio track with the preferred songs from iTunes (converted properly beforehand) then re-mux it in ffmpegx and burn in Toast 6?
Is there an easier way I am missing? I found a lot of PC-based answers, but none for the Mac if previously answered....

Or, maybe demux it and throw it into DVDSP3 and change the audio track there then burn? Which do you think would be easiest?

You don't have to remux before putting it into Toast. Assuming the audio is the same length as the video and is a single AIFF you can simply drag the .m2v video to Toast and it will ask you for the location of the audio file.
