how do I get DVDStripper (and other Cd/DVD-rom access type programs) to work off my local hard drive folder?

I think you need to elaborate more.
My initial reaction is that your question is incoherent -
sorry about that...
I would like to use dvdstripper... but the source for the DVD folder it looks for is from a cd-rom and not a folder located on the hard drive.
I would like an utility that would mask this fact and allow DVDstripper to run off a folder on my hard drive. DVDStripper by itself doesn't do this. (or I have no idea on how to get it to do this.)

rip to an .iso with Dvddecrypter
then mount the image using Daemon Tools
Voila!
