To keep menus and adding a subtitle that was not on the disc. I am aware that you can keep the menus and subs but is there a way to introduce a new sub and be able to see it in the menus section once the disc has been backed up?

I't posible but far from a one-click solution. You have to be familiar with concepts of demuxing video and audio streams and re-author again with a author utility ( Maestro, Scenarist,...)
