I'm want to get the best results with what I have using the following:
DAC-100
Ulead Meida Studio 7
DVD Burner -R
I looking to take my old VHS tapes of family videos and put them on DVD. I would like to get as much time on the DVD-R as possible but with the same quality as the original VHS.
What should I capture at - what size? I know DV is 720 x 480 and VHS is 352 x 240.
After I am done capturing then what should be done to get the best results without the hassle of using numerous programs.
I'll be burning it with DVD Workshop.

everybody has a different interpretation of good quality.
so i suggest creating some test movies, e.g. a commercial. use different resolutions and bitrates, and see (litterally) what works best for you.

this depends on the hardware (cpu, free hd space) and software (which codecs does it support).
low compression means low cpu usage but large hd usage, high compression means high cpu usage but low hd usage.
when i said try i really meant try. select a codec and watch the cpu usage, hd usage and quality of the captured video.
