I am in the process of encoding LOTR. the two towers. I also want to encode the 5.1 dolby digital, but when I only get 2.0 Thatīs a good sound. I canīt really complain. But I believe 5.1 is better

Can anyone help me encode 5.1 with dvdx or another program ?

I take it you're trying to create an AVI? Don't reencode the audio - just demux it. Encode video only, and then "mux" your video stream with the ripped AC3 track.

no I am trying to encode a svcd. So I guess you have to encode video and audio from the dvd seperatly. If thatīs the case, how do you do it and with what program ?

SVCD is 2 channel mpg1 layer2 audio only. Some (extremely rare) DVD players accept AC3 in SVCD, but it's highly unlikely.
But I believe 5.1 is better
It's better beacuse it's 6 channels, yes, but not better at all if you don't have a 5.1 sound system (disregarding loss in reencoding to other format).
