I am interested in getting a new video capture card, but I also am interested in setting up a multiple monitor system.
Is there any card (in particular or general) that will serve as both?
All I know about multiple monitor setup is that you need a 2nd video card from your first. I was thinking i could combine these two into one card

First, you don't need multipl;e video cards for multiple monitor setups. The best I've seen lately is the Matrox Parhelia card which can drive up to 3 monitors (3 VGAs or 2 VGAs and a real-time preview NTSC or PAL monitor). It got great reviews from DV Magazine, Videomaker magazine and Camcorder and Computer Video magazine (well, at least on 2 of them, don't remember exactly which).
As for capturing, that is where you may need another card.
If you really want one card that does it all, your best bet would be to check the latest ATI All-in-wonder cards, I'm just not sure they can drive more than one screen. -
