I find it a pain (certainly after buying DVD2One which is wonderful) but at the minute it's my preferred option.
I rip each episode (vob) to my hard drive *seperately* with CladDVD. This is crucial to avoid any out of sound and video sync issues. I then load each vob into DVD2Avi to produce a video (.dv2) and audio (.ac3) file. I then load these first episode .dv2 video file and the first episode .ac3 file into tmpgenc and create a dvd compliant (720 x 576 @ 3000kb/s - this gives me six per dvd-r) mpeg.
I then use Ulead Movie Factory to create my menu's and chapters (I also capture the audio as a background music clip.
Please note TMPGEnc doesn't have 5.1 support.
Tip, create six folders (Episode 1, 2, 3 etc) and drop each episode file into each folder.
    HTH,
