    Is it best to capture in real high quality [like 4 gig per hour] then "convert" down to fit like one hour on a CD?

    In my experience.. yes. I capture in the highest quality possible, usually I use huffy. It's good practivce to wait until the very last step to convert your video to a smaller size.
