I was placing an order on Amazon and I noticed they increased the sales tax. The maximum Texas sales tax is 8.25%,but Amazon is now charging 10.5%. Their making a profit on sales taxes?

Contact Amazon, if you can, and tell them to fix that sales tax error.

You should report the suspected sales tax error to Amazon. If Amazon does not give a satisfactory response, report the problem to the appropriate taxation authority in Texas. However, Amazon can't make a profit on extra sales tax collected in error. Retailers are required turn over all sales tax revenue they collect to the state.

your in Texas, where is the Seller ?
if you are buying from an Amazon Seller, NOT Amazon
if it is shipped from the Sellers Location, not the Amazon wharehouse
you may be paying tax for the Sellers "state" sales tax
