    Is it possible to lock the audio (& subtitle) that added with mkvmerge GUI to a MKV file (without ReEncode File)? ( In fact i want anybody else can't extract the audio (& subtitle) with mkvmerge GUI again .

    You could burn in/hardcode the subtitles. But it requires that you reconvert with for example avidemux, xvid4psp, etc.
