The Hauppauge HD PVR is a USB device that can record HD video from a component video connection and 5.1 audio from an optical S/PDIF connection and hardware encode to H.264. If stereo audio is enough, there is the AVerTV USB HD DVR, which also performs hardware encoding to H.264.

Hardware encoding makes these good choices for use with laptops, which do not often have a CPU that is powerful enough to encode HD video in real time. They both also have a component pass-through feature, which means you can connect the device to a TV and play without using any splitters or experiencing a delay. All you need is an A/V component cable and appropriate audio cables to connect the capture device's pass-through component and audio ports to a TV.

The devices I have seen with HDMI video input are either internal cards that won't work with a laptop, or external devices which depend on the computer to do software encoding, and need a powerful computer equipped with USB 3.0 and selected chipsets in order to work.

AVerMedia also has another component capture device that's a bit cheaper, but you need to add on the cost of a hard drive if you don't already have one you can use (internal or external). It may be ideal for you since it doesn't require using the computer to record at all.

Yes, you will need to use XBox 360 component cables for the Xbox 360 and regular component A/V cables for the TV to connect all of the recommended capture devices while recording game play. The HDMI output on the AVerMedia HD DVR USB is only for watching recorded content playback, not live output for playing the game while you capture.

A Blackmagic Intensity Shuttle is almost certainly way out of your league. To use one of those you need a fast i7 or i5 quad core system that has a motherboard with specific chipsets to supply acceptable USB 3.0 controllers, and a RAID array of HDDs to store the gigantic files produced by the lightly-compressed codecs you need to use for capture.
