  1. Ripping a DVD, I want to preserve:
    a. Chapters. I want to be able to skip chapter by chapter.
    b. 2nd audio. I want to be able to change, depending where I play the final rip.

    I am not sure the avi format (xvid) can do that. Perhaps DivX can.

    Do you recommend ripping in mkv?

    If so, what tool?

    Will the chapters be preserved or do they need to be redefined?

    MKV.

    You can use MakeMKV to easily make an MKV from a DVD and keep chapters and several audio tracks. But it doesn't shrink the video.

  3. Meaning that I will end up with a ~8gb mkv file from a DL DVD?

    Or use XmediaRecode. It handles up to two audio tracks and lets you set chapters (I don't think it keeps the original chapters though)
