Short and sweet: How do I do it using Convertx? Not sure about the DVD menu settings and how they act with one another. Suffice it to say dual layers don't come cheap. Have already converted them to iso/img individually, but still have the original .mkv files

Let ConvertXtoDVD do the conversion (with menus, if you want), then burn to Verbatim DL discs with Imgburn. If you don't use Verbatim discs and burn with Imgburn then you are just throwing money away.
Don't output to ISO, but output to folders. Let Imgburn work out the layer break position for you. Test play before you burn do you know what you are getting.Read my blog here.
