I’m doing some research on a video card and I’m not quite sure what I am seeing when it comes to specs.
Here is two different websites describing the same card.

On the s-video, does this mean I have component out for digital and analog? Just digital? Also, VisonTek describes this as a “workspace card” instead of your normal graphics accelerator card. Is there really a difference between the two to warrant a name change? I am thinking about buying a used dell that has one of these in it. Thanks for any help!

That's not a S-Video connector. It's a proprietary connector which attaches to a dongle with various other outputs (one of them being component).
Many vendors have "workspace cards". Which typically means dual monitor support, but the card doesn't have much memory which isn't needed for office type apps anyway.Google is your Friend
