    WHen I demux the streams from my dvd, the video is mpeg-2 .m2v, the audio is dolby digital .AC3, and the subtitles are .SPC.

    How can I convert these to simple srt subs?

    Try TitleLab and see if it can at least open them.
    If so, then you can export out as .srt files,
    or better, as DVDSP compatible .stl files.

  4. I believe that Cinematize Pro will decode subtitles from DVDs and save them out as QuickTime movies, or SRT or STL format files.

    There is a free program called D-Subtitler that claims to be able to decode and save out subtitles but I have never gotten it to work.
