WHen I demux the streams from my dvd, the video is mpeg-2 .m2v, the audio is dolby digital .AC3, and the subtitles are .SPC.
How can I convert these to simple srt subs?

No idea... SPC seems to be a proprietary MAC format:

I believe that Cinematize Pro will decode subtitles from DVDs and save them out as QuickTime movies, or SRT or STL format files.
There is a free program called D-Subtitler that claims to be able to decode and save out subtitles but I have never gotten it to work.
