I've found several guides online that uses both tools - sometimes separately, sometimes together. What exactly is the purpose of each? I thought that they both did the same thing - rip the DVD to the hard drive so that it's able to be burned onto a DVD-R?

Also, I've been using Magic DVD Ripper, and was wondering if anyone knew whether or not I could choose between subtitles or no subtitles on the movie, but still have the subtitles options enabled? For example, when I choose to rip a movie with subtitles, it'll automatically show up on the movie that I burn, and I want to know if I can rip a movie with the subtitles (movie only, no menu options), but choose whether or not I want the subtitles when I'm watching the movie.

    No.

DVD Decrypter reads data off the disc. It does nothing else.

DVD Shrink compresses the data (transcodes). While it can also sometimes read data off the disc, it's not very good at it.

Shrink also allows you to alter the structure of the DVD, within reason, by removing audio or subtitle tracks you don't need, replacing extras with still images, or re-authoring to just the movie - no menus, no extras.
