    What's the best way to turn a Divx with 5.1-channel AC3 audio into one with simple stereo?

    VDub or VDubMod to demux the audio, BeSweet to downchannel (is that even a word?) then VDub/VDubMod to mux it back in.

    Actually you can just go in virtualdub and go to FILE-SAVE WAV and you'll get a stereo wav with no extra work. Then load that into besweet if you still need a ac3. Though depending on what you're using a lot of encoding programs can take wav.
