You can try a HDTV PCI card. For instance, mine (a Dvico FusionHDTV Gold3) will capture OTA as well as QAM encoded cable. But since I do not subscribe to the premium channels, I do not get Discovery, ESPN, etc... only what would be available OTA. But I imagine if I subscribed to their premium cable package with HDTV, I would get those encrypted HDTV channels. But I have no way of checking.
There was a card that someone (I believe it was John "Fulci Lives" Coleman) pointed to an expensive HDTV card that would capture even the encrypted channels. It was about $600 though.
You might also look into a DVHS VCR. You might be able to dump the stream direct to DVHS.
Also a friend of mine and I captured some HDTV content off INHD. In one instance we captured to his PVR and then tried to port over to his PC via firewire. It was encrypted and did not work. I think we discovered that we could capture it live straight to his PC via firewire (from his PVR) and it would work. Also, some programs did not set the "copy once" flag and would allow us to capture to the PVR and then via firewire transfer to PC.
Hope that helps. Good luck.
