ok i used tmpgenc plus to convert 5 42 minute files which i was planning on putting on one disc, now i couldnt use ffmpeggui for audio since its not one file huh? and tmpgenc plus doesnt combine all files and output one mpeg2, or does it just make the files all fit together using the numbers from the bitrate calculator?

  2. You need to demux the audio. wav, mp2, mp3 or whatever it is then convert it in ffmpeggui to ac3. tmpgenc plus can demultiplex for you. Look in file/mpeg tools/simple demultiplex. Then you can remux after audio convert.
    Quality is my policy.

That's fine. So you have 5 M2V files, right ?

Just use ffmpeggui on each of the 5 source files, giving each file the same name as it's corresponding M2V (ex. say you have video1.m2v --> video5.m2v, name the audio files video1.ac3 --> video5.ac3 and then any authoring software that accepts elementary streams should be able to author them, no questions asked. Alternatively you could mux the audio and video together to form 5 MPEG files if you wished.
    If in doubt, Google it.

You shouldn't need to demux either since libavformat can handle avi, mpg, etc.
