Do the 2 channel player systems join the 6 channel ( Dolby Digital 5.1 ) productions at the time they play? If so, how do they do? Is there a rule for that?

Yep. A lot of discs will have a stereo only track in addition to the 5.1 track. But if there is only a 5.1 it will get properly mixed by the system. Even if you only have a stereo or mono tv the output will sound normal without a surround sound receiver.
