My LG DVD recorder (standalone, not computer drive) can record video in 1, 2, 4 or 6 hours mode. Would the audio quality be different too or just video?

Usually not. Most machines record audio at 256k, a few do 192k. Some 224k. All are fine for AC3 or even MP2 to a degree.
