I have 6 tv caps which I am putting onto a dvd. I want a menu that allows me to "Play All" (episode 1 through 6) and an option that selects a single episode - is this at all possible ?

yes, they are pretty easy. You could even have one video title with multiple chapters, and if you wanted to play just a single chapter, create a "Chapter Playlist" (there are different types of playlists available).
