  1. I made a new batch of ale tonight and UGGGGG! I made a bunch of rookie moves... Shit I'm worried this batch will be all fucked up

    First I cooled it way too fast and all the shit didnt have a chance to settle out and most of it went into the fermenter with the rest of the good stuff.

    Then I forgot to take the air trap out of the frigging bucket before I added the wort, then I reached into it with my bare friggin hand and got it out

    Then, I put the yeast in and stirred it too soon making most of it all clump up

    SHIT!!!!

    /Note to self: don't friggin drink beer while making beer!

    It may or may not turn out, becuase of the bacteria on your hand.
    How many time do you usually pitch the beer? I alway pitch it 3 times, as I'm pretty anal about clearity. If you pitch it at least twice. What did you use to make your wort? Full grains/hops? Can stuff/hops All can stuff?
    If it's the first or second, your beer will just be a little/lot more bitter than it should be. If it's the last one, I suggest throughing it out and doing the first one

    What was the recipe?

  8. Well, I think my hand was pretty clean as I had just had it in bleach sanitzer while cleaning the bucket.

    The recipie is as follows:

    6 lbs gold liquid malt extract
    1 lb crushed grains steeped for 30 minutes
    2 Oz Perle bittering hops added at first boil
    2 oz cascade hops added 2 minutes before the end of a 60 minute boil

    I then took it off the burner and let it stand for 15 minutes before adding the ice to the wert. I put so much ice that it cooled from like 200 degrees to 68 degrees within about 2 minutes.

    What do you mean by "pitch it"? You mean transfering to another fermenter?

    I leave it in the primary for a couple of days after the main fermentation, so about 5 days, then transfer it to a glass carboy for an additional 7 days. After that it will go into my kegs for final conditioning.

    Fermentation is going good (as of this morning) so I don't think the yeast clumping is an issue, but I am worried about all the hops and stuff still in the wort. In a way though it might be good because the hops has a natural anti-bacterial effect....

    Pitch, yes racking it to another carboy. I do all my beer in carboys. I do 2 1/2 gal batches instead of 5 though. I also control everything in a special refrigerator (regular frig but has a special cut off thermometer)

    Here's a great recipe I created a long time ago...Made about 50+ batches of it at least.

    Category : American Brown Ale
    Method : Partial Mash
    Starting Gravity : 1.056
    Ending Gravity : 1.014
    Alcohol content : 5.4%
    Recipe Makes : 2.5 gallons
    Total Grain : 3.57 lbs.
    Color (srm) : 26.8
    Efficiency : 75%
    Hop IBUs : 16.5


    Malts/Sugars:
    1.00 oz. American Chocolate
    0.13 lb. American Special Roast
    0.25 lb. Canadian Honey
    0.13 lb. Crystal 90l
    3.00 lb. English Amber Dry
    1/4 cup Honey
    1/4 cup Extra Lite


    Hops:
    1.00 oz. Cascade-p 4.4% 10 min<at last 10 mins of boil
    1.00 oz. Willamette-p 5.0% 30 min<add at begining of boil

    Yeast:
    Nottingham yeast (dry)



    Notes:

    Total Boil time is 30 mins
    Total steep time is 30 mins


    Steep grains for 30 minutes at 155 deg in 1 gal water.
    Then add malt extract. Bring to a boil stiring constantly
    Then add Willamette-p Hops. Boing for 20 mins
    Then add Cascade-p Hops. Boil for 10 min.
    Add to 1 1/2 gals *cold* water, that is already in carboy

    Use 1/4 Cup Honey and 1/4 Cup X-lite Malt to Prime in 2 cups H2O

    Yes, this is an amber ale. I got a feeling it's gonna be pretty hopped up!

    I have a temerature controlled fridge too My controller can do both cooling and heating depending on the time of year.

    I have a really simple recipe for making beer. All you need is a five dollar bill and a store. Yields about six beers.

  17. It's not hard. Take about 3 hours to make it and most of the time you are just watching it to make sure it doesnt boil over.

    My main problem last night was a drank 4 beers really fast on an empty stomach and got a little loopy and started making stupid mistakes.

  19. BTW, instead of using a bleach based sanitizer, which in my opinion really sucks, try using Iodophor sanitizer. It's iodine based and it takes less to do the same job. Plus, in my opinion it does a better job...

    PS, nice frig....I have a REAL OLD (late 60s wood frame) mini frig that I use. Got it for free. It only holds 2 (2 1/2 gal) carboys in it. I was going to use it for a tap system but the the sucker was so old I couldn't rebuild the darn thing. Now it just sits on the back pourch sucking the energy away...that is when I'm brewing, other than that it's unplugged the rest of the time.

  22. I ordered some of that sanitizer that you don't need to rinse before you use. These first 2 batches were kit beers and both look like they're gonna be in the weak range of about 4% alcohol

    I'm already working on my own recipe. Eventually I'll mash my own grains, but I still need more equipment before I can do that.

    How does this look?
    Makes 5 gallons
    8 lbs light liquid malt extract
    1 lbs 40L Crystal, crushed
    2 oz Perle bitter hops 7.2%
    2 oz Cascade aroma hops 5.4%
    10 gr SAFALE S04 DRY ALE YEAST

    Steep grains between 155-170 degrees for 30 minutes
    add malt and boil.
    Add Perle hops at first boil
    Boil for 60 min adding cascade hops 5 minutes before boil ends

    Cool to less than 80 degrees, pitch yeast
    5 to 7 days in primary fermenter
    7 days in glass carboy

    Keg condition 1-2 weeks
    PS, Bestbuy has a nice mini fridge for $200 that will hold a 5 gallon corny keg and a 10 Lb CO2 bottle. I want to get it and put a tower tap through the top

    0.50 oz. Challenger P 8.2% 45 min
    0.50 oz. Fuggle-L 5.4% 30 min

  26. Thought I'd report back on this batch becuase of the initial problems I had.

    It was a little harsh at first, but I let a keg age until this last weekend and it was awesome! My best tasting batch to date! And it was very strong! My brothers wife got shit faced on half a glass! I myself had a mean ass buzz after only 2 glasses

    No, unlike your starwars threads, I only have 3 beer threads! :P

    I made my 6th batch this weekend and so far so good! I'm no longer using "kit beers". The last 3 batches have been my own recipe
