How much is too much?

Just wanting people's opinions here, how much compression (dvdshrink) or how should a movie be before you say, too much and instead of compressing, span it over 2 or more discs?
I did Forrest Gump which is 141 mins, and it compressed it took it down to 61%, I went with it and it looks suprisingly, great. However I am going to be backing up Scarface, which is like 178 mins and I really wonder about that, is that one i should span?
Any opinions on this?

remove the dts audio and scarface will be just fine. the dts audio on scarface is 1gig in size. just keep the dd 5.1. scarface then will use less compression than the forest gump you just did.

Really a personal choice. Do it and find out. If it is acceptable to you then that is all that matters.
