I think I've found the easiest way (for me anyway) to do my DVD Rips.
I think I used to do it the same way everyone else does: Rip entire movie, encode entire movie, cut movie after encoding. The way I cut, I did it manually using scene changes for places to cut, which after it's already encoded is kind of a pain.
The new way I do it, is to watch the DVD a little per chapter and decided on where the best places to cut are, usually around the 45-48 minute mark (depending on chapter stops and movie length) to fit the movie on a single 80 minute CD-R at at least 2000kbps avg bit rate for SVCD creation. I write down the chapters I need to rip and then rip each section separately using the chapter selection in SmartRipper. For example, for a 2hr movie I may have disc 1 be chapters 1-8, disc 2 be chapters 9-16, disc 3 be chapters 17-24. I rip and encode each set of chapters separately. This method gives me VERY PREDICTABLE results because I can determine the PERFECT maximum average bitrate for each section before I start encoding. The cutting is already completely done before hand and is usually much better cutting than I can perform manually because most DVD chapters are occuring on a scene change anyway.

You can "cut", whereever you want. Rip several parts, create several dvd2avi projects or use TMPG's source range/ CCE's frame range. All these methods are better, than cut the MPEG afterwards.
I prefer to rip and decode the entire movie, then I select start and end frames of the parts using source range. Here helps the info.txt file created by smartripper to find the chapter start frames. -
it's a lot less fuss to specify file-splitting by chapters and rip the entire movie....allows any option discussed here
