I was thinking of purchasing DVDit but I was wondering if anyone here has any experience w/ it. How good does it transcodes DVDs compared to other software (Shrink, IC8, DVD2One, etc)? Thanks for the help.

DVDIt is an authoring tool, not a transcoder/encoder/whatever-coder.
It's for creating DVD structures, not ripping or converting.
