If I've already ripped the DVD using DVDshrink and have ended up with the VOB etc. files, can I use these already created files to save time using one of the many different kinds of DVD2SVCD/VCD/AVI programs? Would I just have to skip the ripping part of the guides and carry on from a different section or is there no way to get past inserting the disc and ripping and starting the whole process from scratch

    Thankya'll

You can use DVDshrink, DVD2AVI and several other programs depending on what you want to do.
