  1. Hi,

    A question to all you budding chefs out there.

    How do I sautee some potatoes? I am aiming for thin potato slices (about 5mm thick) in a roux sauce (white sauce).

    How do I "sautee" something?

    Any other ideas that you lot find tasty that can be cooked on a budget? I'm at Uni now, and I have to budget these things...

  2. Add a little oil over meduim heat
    add potato slices
    cook slowly until fork tender
    add sause

    as a side note
    after slicing the potatoes, place them in a bowl of cold water and place them in the frig for a hour or so, then before you use them, rinse and dry them. This will remove a lot of the external starch and they will cook and taste better.

    My favorite:

    for mashed potatos: add 2 cloves of whole (peeled) garlic to the potatos as they're boiling. When you go to mash them up, the garlic will mush & mash right along with the 'taters.

    Start mashing, add big glob of butter and small amounts of milk 'til they're as creamy as you like.

    Really yummy way to keep mashed potatoes from becoming boring. :c) And cheap too. :c)

    But, of course, you've gotta like garlic. :c) And the garlic rule: everyone has to have some.

    Goes especially good with Southern Fried chicken :c)

  5. Thanks guys - I'll be doing that tomorrow. I only have one lecture tomorrow and that's between 9:15 and 10:15, so I'm off down to Bath for a while that afternoon to get some food and stuff. Wallet allowing.

    Any other ideas for cheap tasty nosh?

  7. BBQ, you can never go wrong with BBQ and a baked potato.

    Here is one my family likes:

    Take skinless, boneless chicken breasts, salt, pepper, and place on a covered charcoal grill for 10 minutes on each side.

    Cut into thin stips and dip in a bath of BBQ sauce. Place back on the grill.
    Sprinkle on a little flour and cover with more BBQ sauce.

    Let cook covered for another 5 minutes, turn over, more flour and BBQ, cook for another 5 minutes.

    Serve with a nice Ceaser salad and baked potato with lots of sour cream and butter.

  8. Don't know if its still in print, but when I was a poor student, a book called 'Grub on a Grant' was a lifesaver. I know you don't get grants these days , but the principal is the same.

    okay, the student food staple - ramen noodles (15 cents a package out here).

    cook up the ramen, adding either some vegetable broth, buillion cubes or the seasoning packet during cooking. drain but don't rinse.

    in a wok or stir fry pan*, heat up some sesame or peanut oil, add any of the following:

    - sliced vegetables
    - diced onions or shallots
    - diced ginger
    - cut up chicken, beef or flavored tofu / tempeh
    - extra spices to taste (chili powder, hot sauce, etc).

    once those ingredients are cooked, throw in the drained ramen and let it all cook together for a couple of minutes. throw it all in a bowl, grab some chopsticks and dig in.

    dirt cheap, very filling, quite tasty and incredibly variable.

    (* if you don't have a stir fry pan, go and get one - go to your local big retailer, like Target or K-Mart, look for a large, deep pan, rounded sides (not cylindrical), with a teflon / non-stick coating. you should be able to get one for under $10, and you can cook almost anything in it).

    Here's one from my Mom:

    BAKED STUFFED CHICKEN
    6-7 lb. chicken
    1 cup melted butter
    1 cup stuffing (Pepperidge Farm is good.)
    1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT)
    Salt/pepper to taste
    ______________________________
    Preheat oven to 350 degrees. Brush chicken well with melted butter,
    salt, and pepper. Fill cavity with stuffing and popcorn. Place in
    baking pan with the neck end toward the back of the oven.
    Listen for the popping sounds.


    When the chicken's ass blows the oven door open and the chicken
    flies across the room, it is done.
