what is the disadvantage of fitting it all on 1 CD-R instead of using 2
    CD-R?
is it the quality of sound or video or both?

Video quality may be poor, depending on how long it is and how much action there is.

Audio quality may be poor, if you lower the audio bitrate too much to try to avoid lowering the video bitrate too far.

You will be producing a nonstandard VCD, which means that some players will not play it correctly.

It's VCD format which is the lowest quality to start with. It depends how many minutes you try and squeeze on the disk. I'll do it for some of my kids movies and they don't seem to mind at all.
