You can either use external subtitles (with a player like BSPLayer or MicroDVD, they also support autorun and ini files for playback from CD) ,
or the ogm format, which can put several audio tracks and subtitle files together, and can also take them apart again .
Downside is that you need an additional decoder, and the ogm format is not really widespread yet .
There is a guide on it at www.divx-digest.com and also stuff in the www.doom9.org forum .

use vobsub to rip the subs http://www.doom9.org/dvobsub.htm
then you need the directshow filter to be able to see them http://www.divxmovies.com/subtitles/
