    I am converting a video episode using TMPGEnc.

    Is the way the video episode is going to look on my DVD player the same as the way the final MPEG looks (i.e. or the way the preview in TMPEnc looks in) or is it going to look like the way the main viewer in TMPEnc looks?

    The main viewer isn't the good place to look at it. It's better that you Download a MPEG2 player (i recommend Elecard MPEG2 Player, you'll find it under tools). that player gives you the exact view like it will be on your television... but, a computer screen isnt exactly the same as a TV screen, so in fact, you're never 100% sure of the result.
