May I recomend some light reading.
The answer to your question partially depends on your playback system and resonal preferance.

so if im backing up my dvd with dvd2one and i only want to choose one audio setup so that my video bitrate is higher which one should i choose to play on my sony surround sound hookup with the subwoofer and everything?

DTS actually usually does sound better than Dolby Digital, b/c DTS allows for a higher bitrate, and therefor better sounding audio. Whether or not it's an actual audible difference depends a lot on the viewer/listener.
Also, don't be fooled that b/c one stream has more channels, it will sound better. The sound 'quality' will be the same b/w DTS (5.1) and DTS-ES (6.1), however, if you have a 6 channel receiver, and the proper speaker setup.. 6.1 offers much better sound placement, the actual quality will be the same though.
hope that clears it up for you. -
Not having used DVD2DVDR I don't know how this program works so forgive my ignorance.
Assuming DVD2DVDR will author and burn the DVD with only the DTS track then this will probably give you the best sound, however, to be fully compatible with the DVD standard you must have an AC3 track on the disc.
