I've heard it mentioned so many times on lots of posts, but I still haven't got a clue what this Avisynth is ?
Can anyone explain, or are there guides/explanations on here somewhere ?

You gotta try it out.
I've recently been capturing Scooby-Doo episodes and putting them on dvd. The most fun I had was using avisynth to create the motion menus. It was a snap.
Generally:
- Load a jpeg for the background (haunted house), and turn it in to video 1000 frames
- load 5 clips 1000 frames, from mpeg or avi, resize and position them
- load a jpeg "pictue frame" of bones, mask it and lay it over the clips. Everything but the bones are then transparent .
- Open it in virtual dub and fix the frame rate then encode with cce
All the work is done by Avisynth in not to many more lines than this post.
Check out this gui. It can really help you try different things and see the results right away:
