How do I RIP a DVD so I can get with the text?

You want subtitles?
When you rip your DVD, make sure you rip in "File Mode" with SmartRipper or use DVD Decrypter.
Make sure that the relevant IFO files are copied over if this isn't already done.
Now, load up the relevant IFO with FlaskMPEG and you will get a choice of the video, audio and subtitle stream.
You can do subtitles with the DVD2AVI method too, but this is more complex.
