Newbie Confused Please Help

Ok, I know this has been asked and explained several times before....but after searching through forums for the last 5 hours, I am more confused now then when I started....I've just bought a pioneer 105 and am thinking about backing up some of my dvd's and ps2 games...I have read countless number of guides and which software I should use....some of the software is not available anymore ( eg Spruce dvd maestro )....I would really appreciate it, if someone could advise me which guide to go for and what software I would need...as there are that many guides, I am getting totally confused...I was looking at the guide for DVDXCopy, but then realised that this method seems really easy, but doesn't put the dvd onto 1 disk...I don't mind having to rip certain parts out of the dvd to put onto one disk, but am confused what software to use ( DVD Decryptor, IFOEdit, Vobrator, DVD-R Calculator, DVD2AVI, TMPG, Chapter Extractor, Spruce DVD Maestro, Gear Pro....the list goes on )
